Vegetarian Recipe: Couscous and Guacamole Wrap


Ingredients for this recipe:


For the couscous:


  • 1 cup dried couscous, cooked according to package instructions
  • 2 tablespoons chopped, fresh parsley
  • 6 spring onions, finely sliced
  • ½ cucumber, finely diced
  • 1 tomato, finely diced
  • ½ red pepper, finely diced
  • ¼ cup extra-virgin olive oil
  • Juice of one lemon
  • Salt and black pepper

4 whole wheat tortillas to serve


For the guacamole:


  • 1 ripe avocado, peeled and stoned
  • Juice of ½ lemon
  • ½ red chilli, seeded and finely sliced

Method for this recipe:


  1. Place the cooked couscous in a bowl and add all couscous ingredients. 
  2. Mix together well. 
  3. Chill for 20 minutes. 
  4. Meanwhile make the guacamole. 
  5. Do this immediately before serving or guacamole will brown (although the lemon juice does help prevent this a little). 
  6. Place the avocado in a bowl and add the lemon juice and chilli. 
  7. Mash with a fork until smooth and season with salt and pepper if desired. 
  8. Warm the tortillas in a hot oven for 2 minutes or in a non-stick pan (one minute on each side). 
  9. Divide the couscous mixture into the tortillas and top with the guacamole. 
  10. Add a dollop of sour cream or low-fat plain yogurt. 
  11. Roll up the wrap and enjoy.

Vegetarian Recipe: Eggplant Mozzarella Rolls


Ingredients for this recipe:


  • 1 large eggplant
  • 3 tablespoons olive oil
  • 1 ball mozzarella cheese (should make 8 slices)
  • 2 plum tomatoes, each cut into 4 slices
  • Handful of large basil leaves
  • Salt and black pepper

Method for this recipe:


  1. Cut the eggplant lengthways into 10 thin slices. 
  2. Discard the two outside slices. 
  3. Sprinkle the slices with salt and set aside in a bowl for 20 minutes.  Rinse under cold water and pat dry with paper towels.
  4. Preheat a grill to high. 
  5. Place the eggplant slices in a non-stick pan and brush lightly with olive oil.
  6. Place under the hot grill for approximately 8 to 10 minutes until golden. 
  7. Turn once during grilling.  Remove from heat. 
  8. Now place a slice of mozzarella and tomato in the center or each slice. 
  9. Top with a few basil leaves, season if necessary,  and fold the eggplant slice sides over the center filling. 
  10. Now cook seam-side down under the grill until the mozzarella begins to bubble. 
  11. Drizzle with a little olive oil and serve.

Vegetarian Recipes: Hearty Lentil Casserole


Ingredients for this recipe:


  • 1 large onion, finely sliced
  • 4 medium carrots, grated
  • 3 leeks, sliced
  • 2 garlic cloves, peeled and crushed
  • 1 sweet potato, peeled and cubed into small pieces
  • 1 inch piece of fresh root ginger, grated
  • 1 teaspoon cumin
  • 2 tablespoon olive oil
  • 8 ounces split red lentils
  • 5 cups of hot vegetable stock
  • Fresh chopped parsley

Method for this recipe:


  1. Prepare all the vegetables and set aside. 
  2. In a large pan of hot water bring the lentils to boil and boil on high for 10 minutes. 
  3. Drain and returned to rinsed pan. 
  4. Add the vegetable stock, sweet potato pieces and grated carrots to the pan. 
  5. Reduce heat and simmer for approximately 40 minutes. 
  6. Meanwhile, heat the olive oil in a non-stick frying pan. 
  7. Saute the onion for approximately 4 minutes. 
  8. Add the garlic, ginger and cumin and sauté for another minute or so. 
  9. Add this mixtures to the lentils about 10 minutes before the lentils are finished cooking through. 
  10. Garnish with fresh parsley and serve.
