BRAISED CHICKEN PORTIONS RECIPE (10 servings)
Ingredients for this recipe:
- 1 large chicken
- ½ cup cooking oil
- ¼ cup golden syrup
- 2 T.spoons soy sauce
- 2 T.spoons soft brown sugar
- 1 T.spoon cornflour
- 1 T.spoon ground ginger
- 1 T.spoon salt
- Pinch of pepper
Method for this recipe:
- Cut chicken into portions.
- Place in a shallow cast-iron saucepan or a large heavy-based frying pan with a lid.
- Mix the oil, golden syrup and soy sauce and pour over chicken.
- Mix the remaining ingredients and sprinkle them on top.
- Cover with lid and braise the chicken over moderate heat until done.
- Turn the portions often to prevent them from burning.
- Serve hot or cold.
MOCK KENTUCKY FRIED CHICKEN RECIPE (12 servings)
Ingredients for this recipe:
- 1 large chicken
- 3 T.spoons lemon juice
- 1 T.spoon Worcester sauce
- Salt and pepper
- Spices for chicken to taste
- Cake flour to roll chicken in
- Cooking oil to dip portions in
- 1 ½ Cup finely grated cheddar cheese
- 1 Cup cornflake crumbs
Method for this recipe:
- Cut chicken into portions.
- Mix lemon juice and Worcester sauce and sprinkle over.
- Cover and marinade for 1 hour.
- Season the chicken the salt, pepper and chicken spices.
- Roll each portion in cake flour and dip in the oil.
- Mix the cheese and cornflake crumbs.
- Roll the pieces in the mixture, pressing it into the chicken.
- Place the chicken portions in a single layer in a large baking pan.
- Bake the chicken portions for 50-60 minutes at 350 deg. F.
CHICKEN MACARONI RECIPE (10 servings)
Ingredients for this recipe:
- 1 Cup macaroni pieces
- 1 Clove garlic
- 2 Cups cooked, shredded chicken
- 1 Can cream of chicken soup
- 1 Packet mushroom soup powder
- ¼ Cup water
Method for this recipe:
- Cook the macaroni in salted water until al dente and drain.
- Peel and finely chop the garlic.
- Mix the macaroni, garlic, chicken, soups and water.
- Spoon the mixture into a 6-cup oven proof dish.
- Bake for half an hour at 350 deg. F.
- Serve hot.
