I am sure that most of you are just like me, always looking for tasty vegetable recipes. If you have a fussy eater in the house, you're sure to find these tasty vegetable recipes very handy.


AuGratin Carrots and Onions Recipe 


Everything is better AuGratin and this delicious side is no exception!


Ingredients for this recipe:


  • 1 (16 ounce) package baby carrots, sliced
  • 2 medium onions, sliced
  • 1 cup shredded Cheddar cheese
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 cup fine dry bread crumbs

Instructions for this recipe:


  1. Mix together carrots and onions in a pot. 
  2. Add enough water to cover, and a dash of salt if desired. 
  3. Bring to a broil. 
  4. Cook until tender, but still firm (about 5 to 10 minutes) Drain. 
  5. Spread a layer of carrot and onions in the bottom of a baking dish. 
  6. Next layer about half of the cheese. 
  7. Layer more carrots and onions, then the rest of the cheese. 
  8. Melt 3 tablespoons butter or margarine in a saucepan.
  9. Gradually add flour to the butter and blend well until smooth. 
  10. Slowly add the milk and continue to stir until thick and smooth. 
  11. Season with salt and pepper to your taste.  
  12. Pour the sauce over the layers of carrot onion and cheese. 
  13. Bake for 20 minutes at 350 degrees F.


Lucky Year Black Eyed Peas Recipe


Eating black eyed peas is one of many foods that is said to bring luck to you in the New Year.  It goes good with pork chops!


Ingredients for this recipe:


  • 1 pound dry black-eyed peas
  • 2 cups chopped cooked ham
  • Salt and pepper to taste
  • 1 heaping spoonful minced garlic
  • 2 onions, diced
  • 1 (14.5 ounce) can diced tomatoes or tomatoes from your garden

Instructions for this recipe:


  1. Pour black eyed peas into a large soup pot and cover with water until the pot is about 3/4 of the way full. 
  2. It takes a lot of water to get dry beans cooked and tender and ready to eat!  Mix in the ham, onions, garlic and salt and pepper to your tastes. 
  3. Smash the tomato up a bit before adding it to the pot as well.  
  4. Now bring it all to a boil. 
  5. Cover and simmer for 3 hours or until black eyed peas are tender and well cooked.
  6. Great served over top of pork chops or left over ham slices.


Sweet Potato Pie Recipe


Ingredients for this recipe:


  • 2 cups sweet potatoes, cooked and drained          
  • 4 tablespoons margarine, melted
  • 3 eggs
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 9" pie shell, baked
  • 1/4 cup chopped pecans

Instructions for this recipe:


  1. Mash together your cooked sweet potatoes with melted butter or margarine. 
  2. Whip in eggs, sugar, cinnamon and nutmeg. 
  3. When well mixed add in the milk and vanilla. 
  4. Pour it all into your baked pie shell and heat in the oven for about 40 minutes at 350 degrees F. 
  5. It's done when the center is somewhat firmed up.  
  6. Scatter chopped pecans over the top of the pie before serving. 


Alfredo Spaghetti Squash Recipe


Ingredients for this recipe:


  • 1 medium spaghetti squash, cooked and separated into strands
  • 1 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, finely minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions for this recipe:


  1. Combine everything except the squash in a saucepan and cook at medium heat while whisking. 
  2. Continue to do this until smooth and creamy. 
  3. The constant whisking prevents it from scalding and burning. 
  4. Add the spaghetti squash strands to the sauce and stir until well coated in sauce. 
  5. Remove from heat and serve with bread and salad, baby spinach goes well with this dish. 
  6. You can substitute reduced fat sour cream and low fat cheese to accommodate your diet choices and still get the same great results.

A Different Green Bean Dish Recipe


Were you put in charge of the green bean dish this year?  Spice it up!


Ingredients for this recipe:


  1. 1 tablespoon olive oil
  2. 1 onion, finely chopped
  3. 6 cloves garlic, finely chopped
  4. 6 links spicy pork sausage, sliced
  5. 1 cup water
  6. 2 pounds frozen green beans
  7. Seasoning salt to taste

Instructions for this recipe:


  1. Sauté the garlic and onion until tender. 
  2. Add sausage to skillet and brown all over. 
  3. Add 1 cup of water and bring to a boil. 
  4. Now add the green beans. 
  5. Cover; reduce to a simmer and let cook for about 30 minutes until green beans are ready.
  6. You may need to add a little more water about half way if it starts to get low. 
  7. Season to your tastes.


Acorn Squash with Apples Recipe


This recipe sounds complicated and fancy to your guests but it's really easy!


Ingredients for this recipe:


  • 2 large acorn squash
  • 3 cups apples, peeled, cored and cut in 1/2" pieces (about 4 large apples)
  • 2 tablespoons honey
  • 1/4 teaspoon ground allspice
  • 1/2 cup raisins

Instructions for this recipe:


  1. First cut the squash in half and clean out the seeds. 
  2. Bake these halved squash in the oven for 20 minutes at 350 degrees F. 
  3. While those bake, get out a mixing bowl and mix all the remaining ingredients together for the filling. 
  4. Fill the hot squash and return to oven to bake for another 30 minutes at 350 degrees F
